How to Manage Cooking Fats, Oils and Grease (FOG)
FOG stands for fats, oils and grease. FOG materials are often mistakenly poured down the drain where they cool and solidify. Running hot water and/or soap down the drain is ineffective in clearing these materials from the pipes. Sanitary sewers are designed and installed with a sufficient size to carry normal waste discharges from a residence or business. When fats, oils and grease are improperly disposed of into the sewer system, they can stick in the pipes eventually blocking the pipe and causing sewage backups, overflows and high costs for clean-up and restoration work.
We want to help food service operations and residents understand the problems and manage the solutions associated with fats, oils and grease.
